			<content:encoded><![CDATA[<p>After watching a buncha kids chow down on cheese slices yesterday in the Park, we thought we’d reiterate a few reasons why feeding our children dairy is just absolutely disgusting &#8211; from a place of health, a place of compassion, and a place of basic human decency.</p>
<p>We’d like to acknowledge all the wonderful mothers out there, both human and animal. In particular and as a bit of a contrast, though, we’d like to highlight the plight of mother cows (via the always articulate Mary Max of Kind Green Planet.)<br />

The average meal travels 1500 miles from farm to plate. That’s insane. I do my best to buy local foods. Like the red bell pepper grown in New Jersey that I bought this morning. But even better than getting my food from a nearby farm would be growing it myself. Sadly, I don’t have a garden. I live in an apartment and don’t have a patch of earth to call my own.<br />

Your pantry expands naturally over time as you fill it up with ingredients that recipes require. My pantry has taken years to build. But to kickstart your pantry so that you’ll have more ingredients now and will be more likely to prepare healthy, delicious foods, add some of the following vegan staples to your shopping list.<br />

			<content:encoded><![CDATA[<p>There’s been a surprising development in the V family kitchen.  My daughter E has actually been asking for coleslaw, a food she used to have to be bribed to eat.  This phenomenon began after I stopped buying bagged coleslaw and starting using fresh heads of cabbage.  I could say that E likes the fresher taste of home-shredded cabbage, but that’s not it at all.  The truth is that there’s something about pushing a wedge of cabbage through the shredding blade of a food processor that she enjoys, so I let her have her fun.<br />

Sad to say, I can&#8217;t recall which island (possibly Barbados?), but I do remember that he moonlighted in a steel drum band, and we would often cook simple dinners together and hang out in his room watching Golden State Warriors games.<br />

This has been true recently of my sweet potato and chickpea burgers, which Matt and Katie have made recently, as well as a bunch of other bloggers and readers who have emailed me or left comments on the original post. Thank you guys for trying the recipe out! I hope you’ve enjoyed the sweet, dense taste and texture as much as I did when I first made the burgers.</p>
<p>My experience with the sweet potato burgers got me hooked on chickpea flour. Versatile, high-protein, and possessed of a starchy texture that’s fairly unique, chickpea flour is ideal for all sorts of pancakes, burgers, and bread recipes. Just check out the Twins’ socca adventures if you’re looking to be inspired!<br />
