Recipe Spotlight: Roasted Cauliflower Popcorn From 101 Cookbooks

picture-1I love searching the Veg Blog Search (courtesy of Susan of FatFree Vegan Kitchen) whenever I have a vegetable I want to make well and can’t think of a recipe.  It’s essentially an opportunity to consult the genius Gods of the vegan blogosphere!

Recently, I had some gorgeous organic cauliflower that I wanted to roast in the oven, and I was hoping to find a recipe with a delicious flavor to do it justice – lo and behold, the Veg Blog Search came through and I found a great one!

101 Cookbooks is not a fully vegan blog, but Heidi Swanson creates healthful, delicious recipes that can often be made vegan easily by just leaving out the dairy products (except for those occasional recipes with fish and eggs in them, of course).  This recipe for Roasted Cauliflower Popcorn was a big hit!

Just imagine cauliflower tossed with toasted bread crumbs, lightly roasted garlic, and salt – with such simple ingredients you get a really complex and delicious flavor. I left out the chili pepper since we’re not too into the heavy spices in our house, but this simple set of ingredients led to such scrumptious cauliflower that we just couldn’t get enough of it!  True comfort food.
