Dessert Lovers Rejoice: Double Chocolate Brownies from Sweet Pea Baking Company!

When I lived in Montreal, Canada, I would be able to buy the most delicious vegan brownies from a few great restaurants such as Aux Vivres or La Faim du Monde. But that got expensive!

Since then I have set out to find the best ever vegan brownie that I could whip up at home, with the perfect balance of chewy, chocolatey and moist.  Luckily I came across the recipe for Double Chocolate Brownies in the May/June 2009 issue of VegNews magazine.  Jackpot! According to VegNews this recipe took the Sweet Pea Baking Company months to develop, and it’s easy to see why!

Since VegNews graciously agreed to let us share the recipe on the blog, I am happy to present you with an easy, delicious, knock-your-socks-off vegan brownie recipe. 

Makes 12 brownies

2 cups flour
2 1/2 cups sugar
1 cup cocoa powder
1/2 teaspoon baking powder
1 teaspoon salt

1/2 cup coffee
2 tablespoons flaxseed meal
3/4 cup water
1 cup plus 2 tablespoons canola oil
1 tablespoon vanilla
1/4 cup chocolate chips

1. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt until combined.
2. Add coffee, flaxseed meal, water, oil, and vanilla, and mix with a spatula until mixture is thick and wet.
3. Spread batter into prepared baking dish, and sprinkle with chocolate chips. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out clean.

    I just used instant coffee, since we don’t usually have coffee in our house – yes, it must be a liquid when you use it.

    They look divine but that’s a lot of oil. I’m wondering if I can sub half of that with apple sauce.
