
Today I learned that I like it raw. I attended a two-hour workshop on raw food prep at a local natural food store and came home inspired to begin experimenting. For dinner I made zucchini “pasta” with tomato sauce.
But dessert is the most important course, is it not?
After looking at a handful of different raw vegan pies, I put together this phenomenal apple pie creation.
CRUST
Blend 1 1/2 cups raw cashews and walnuts with 1 Tbsp. agave nectar, 1 tsp. vanilla extract, and a little water as needed to get your blender moving. Spread this mixture in the bottom of a pie plate.
FILLING
Apples are so yummy that I just blended 2 apples, 5 dates, and a little water and spread this on top of the crust.
WHIPPED TOPPING
Whip 1 cup of cashews with 1-2 tsp. of agave nectar, and some water on the highest speed. Put this in a separate container.
Chill the pie and the whipped topping separately. Slice/scoop out a serving of pie, top with the nut whip, and devour!
